Instructions:

Step 1

Cook the Chicken:

In a bowl, mix the chopped chicken with Cajun seasoning, mixed herbs, and 2 tbsp olive oil.
Heat a large pan over medium-high heat and fry the chicken for about 5 minutes until golden and cooked through. Remove from the pan and set aside.

Step 2

Prepare the Sauce:

In the same pan, add butter and olive oil. Sauté the onion and garlic for about 2 minutes until golden brown.
Stir in mixed herbs, salt, and tomato paste. Cook for 2-3 minutes, stirring frequently.

Step 3

Cook the Pasta:

Add 3 cups of water to the pan and bring to a boil. Add the pasta and cook until al dente, stirring occasionally.

Step 4

Add Cream and Cheese:

Pour in the single cream and stir well. Add the Parmesan and sundried tomatoes, mixing until the cheese melts and blends into the sauce.

Step 5

Finish with Spinach and Chicken:

Stir in the spinach and return the chicken to the pan. Mix everything together until the spinach wilts and the chicken is coated in the sauce.

Step 6

Serve:

Garnish with fresh parsley and serve hot.
